Wine Parings for Pinot Nori from Talbott Vineyard

 

 

 I have found a wonderful Pinot Noir I am going to pair with this minestrone. A
friend recently went to tour the vineyard and after raved about it. Well, of course
I had to try it and the suggested meal. Yummy is all I can say!

Ingredients for Roasted Vegetable Minestrone

  • 3 inner ribs celery, cut into 2-inch pieces
  • 1 Tbs. plus 1 tsp. chopped fresh rosemary
  • 28-oz. can whole tomatoes
  • 3 Tbs. extra-virgin olive oil
  • 2 large carrots, peeled and cut into 1-inch pieces
  • 1 large bulb fennel, quartered, cored, and cut into ¾-inch slices
  • Kosher salt and freshly ground black pepper
  • 1-¼ cups mixed dried cannellini and dried kidney beans, sorted through and rinsed
  • ½ cup finely grated Parmigiano Reggiano
  • 3 Tbs. chopped fresh flat-leaf parsley
  • ¼ lb. dried ditalini (or other small tubular pasta), cooked until tender, rinsed with cold water, and drained
Cook the cannellini and kidney beans together. Meanwhile, heat the oven to 450°F. In a large bowl, toss the fennel, celery, and carrots with the oil; season generously with salt and pepper. Spread on a rimmed baking sheet lined with foil. Roast, tossing after 10 minutes and every 5 minutes therea...

GRANDCHILDREN, PARTIES, WEDDINGS AND GOD

What a magnificent year it has been for us. We have 2 new grandchildren beautiful and healthy. We've celebrated with baby showers, births, birthday parties, friends weddings and christenings. 5 grandchildren under 2. To say that we are not a busy family would be an understatement! We love it though and wouldn't change a thing.

Be blessed be humbled be real as you go through life. It's the little things that mean the most.

What a fun theme this was that lasted into the late
evening. Who said baby showers are boring!

a beautiful wedding in Dallas. Reception
always fun at the Crescent Hotel.

Still traveling to destination weddings this one in
Florida. Outside venue for wedding. Great fun
at reception in beautiful older home. It was their fairy tale 
wedding so off guests went in a carriage with white horses.

and if we haven't celebrated enough,
now for Jordyn's big day. Celebrating
her life on earth as a child of God. Blessed!

As you see, our summer was filled with excitement.

HEALTHY LIFE 2013

Those NY's resolutions. How many times have we made them only to forget the next day. Well, this year its all about health in Dallas. Started off with this wonderful new Nike Fuel Band.
Its 149.00 at any of your Nike stores and maybe even a few dollars cheaper online at Amazon or other sites. If you have an iPhone it reads the info immediately. If not you can download the info off the band to the computer and you have your daily readings. Its not bad looking either.

WHAT IT TRACKS

Through a sports-tested accelerometer, Nike+ FuelBand tracks your daily activity including running, walking, basketball, dancing and dozens of everyday activities. It tracks each step taken and calorie burned. It also tells the time of day.

Whatever you use to track those workouts and daily movement. Have A Fit Day!

PARIS, TX 2012 CHRISTMAS

Happy New Year 2013. I can't believe it. But am so grateful and send blessings to you and yours.






 
Getting back to the holidays. Had the fun pleasure of an invite to Paris, Tx. As a city girl you forget the peacefulness of the country, the fresh air, and the country hospitality.
 
That brings me to the delicious meal prepared.
SANTA FE QUICHE
 
2 Frozen deep dish pie shells - thawed
6 white corn tortillas
 
Line the bottom of each pie shell with 3 tortillas
Spread out evenly covering bottom of shell
 
Mix:
Whished 10 eggs
with 1/2 cup half and half
(no this is not dietary) ;) but delicious
Add to that:
1 1/2 cans drained diced green chiles
1 cup finely diced ham
1 8oz bag of grated fiesta Mexican cheeses
Stir together. Add salt and pepper to taste
 
Pour into 2 pie shells balancing solids with liquids evenly
Bake at 375 degrees for 30 - 40 mins
Golden brown and bubbly
Let sit 15 mins before serving.
Add: fresh salsa, cilantro diced
 
Oh, the taste was to ask for another please!!!
 
MEXICAN SALAD
 
2 cans of Mexicorn (drained) set aside
 
Mix:
1 cup mayo
1/2 cup sour cream
2 cups graded cheddar
Add to the Mexicorn
Refrigerate
 
at serving add small bag of Chili Cheese Fritos
Gentle toss and you will be in Mexican Salad heaven.
**This meal is not good as a leftover so ENJOY at sitting!
or do not add the fritos and let everyone put them into their salad separately.
Then you can have as a leftover!
